Ingredients and spices that need to be Take to make Podo pitha (rajo cake):
- 1 cup gota urad dal
- 1 cup raw rice
- 1/2 cup wheat flour
- 1 tbsp wheat flour for adding into pressure cooker
- 50 ml coconut milk
- 200 g jaggery powder
- to taste Salt
- 1/2 tsp fennel powder
- 1/2 tsp black pepper powder
- 1/2 tsp cardamom powder
- 1 tbsp grated ginger
- 1/4 tsp baking powder
- 3 tbsp desi ghee
- Handful dry fruits
- Handful coconut pieces
Steps to make to make Podo pitha (rajo cake)
- Wash and soak urad dal and rice for at least 5 hours or overnight. Next wash both of them and grind them into a fine paste. Keep in a warm place and allow natural fermentation. If you find bubbles you know it's fermented.
- Next take a large mixing bowl. Put the fermented batter, add wheat flour, jaggery powder, salt, fennel powder, cardamom powder, black pepper powder and grated ginger. Add coconut milk and mix all well. Keep this aside.
- Now heat a tawa. Over it place the pressure cooker. Keep the flame slow. Take the batter, add dry fruits, coconut pieces and mix. Put baking powder and mix evenly in one direction. Do not overwork it.
So now batter is ready.
Now in the pressure cooker, put ghee. Use a brush and coat the walls of the cooker.
Next take a tbsp of wheat flour, put into the ghee. Keep flame slow, else it will burn. Now pour the prepared batter over it carefully. Garnish with dry fruits. - Now place the cooker lid. Remove the whistle. Let it get baked in slow flame for 30 minutes.
As it gets baked you will get nice aroma of the spices. Switch off then.
As it cools a bit remove the lid. Poke and check. It must be clean, indicating that it's baked. Cover with a net, do not put cooker lid else condensation with spoil your pitha. - As pitha comes to room temperature. Loosen the sides with a knife and invert it carefully on to a plate.
